Ingredients
  

Peach Filling

  • 6 cups frozen sliced peaches about 2 lbs, thawed and drained
  • ½ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon

Crisp Topping

  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ¾ cup brown sugar packed
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter cold, cubed
  • ½ cup chopped pecans optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish.
  • Thaw the frozen peaches and drain off excess liquid. In a large bowl, toss the peaches with granulated sugar, cornstarch, lemon juice, vanilla, and cinnamon until evenly coated. Spread into the prepared dish.
  • In another bowl, stir together the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter with a pastry cutter or your fingers until the mixture forms coarse crumbs, then stir in the pecans if using.
  • Sprinkle the topping evenly over the peaches. Bake for 40 to 45 minutes, until the topping is golden and the filling bubbles at the edges.
  • Let the crisp rest for at least 15 minutes so the filling thickens. Serve warm, ideally with a scoop of vanilla ice cream.

Notes

For the crispiest topping, thaw and drain the peaches well so the filling is not watery. A splash of extra lemon juice brightens overly sweet frozen fruit.
