Instructions
Preheat the oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish.
Thaw the frozen peaches and drain off excess liquid. In a large bowl, toss the peaches with granulated sugar, cornstarch, lemon juice, vanilla, and cinnamon until evenly coated. Spread into the prepared dish.
In another bowl, stir together the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter with a pastry cutter or your fingers until the mixture forms coarse crumbs, then stir in the pecans if using.
Sprinkle the topping evenly over the peaches. Bake for 40 to 45 minutes, until the topping is golden and the filling bubbles at the edges.
Let the crisp rest for at least 15 minutes so the filling thickens. Serve warm, ideally with a scoop of vanilla ice cream.
Notes
For the crispiest topping, thaw and drain the peaches well so the filling is not watery. A splash of extra lemon juice brightens overly sweet frozen fruit.
