Ingredients
  

For the Dough

  • 3 cups all-purpose flour plus more for dusting
  • 2 ¼ tsp instant yeast 1 standard packet
  • 1 cup warm milk about 110F
  • 3 tbsp granulated sugar
  • 3 tbsp unsalted butter softened
  • 1 large egg room temperature
  • 1 tsp salt

For the Cheesy Garlic Filling

  • 4 tbsp unsalted butter softened
  • 3 cloves garlic minced
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

For the Garlic Butter Topping

  • 4 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • ¼ tsp salt

Instructions
 

  • In a large bowl, whisk together the warm milk, sugar, and yeast. Let sit 5 minutes until foamy. Add the softened butter, egg, salt, and 2 cups of the flour. Mix until a shaggy dough forms, then add the remaining flour a little at a time until the dough pulls away from the bowl.
  • Knead on a lightly floured surface for 6 to 8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for about 1 hour, or until doubled in size.
  • Punch down the dough and roll it out on a floured surface into a large rectangle, about 12x16 inches. Stir the softened butter with the minced garlic and spread it evenly over the dough. Sprinkle the mozzarella and Parmesan all the way to the edges.
  • Starting from a long edge, roll the dough into a tight log and pinch the seam to seal. Using a sharp knife or a length of unflavored dental floss, slice the log into 12 equal rounds. Place them cut-side up in a greased 9x13-inch baking dish, leaving a little space between each.
  • Cover the dish and let the rolls rise for about 30 minutes, until puffy and just touching.
  • Preheat oven to 375F (190C). Stir together the melted butter, minced garlic, parsley, and salt. Brush about half over the rolls. Bake 18 to 22 minutes, until golden brown and cooked through.
  • Remove from the oven and immediately brush with the remaining garlic-parsley butter. Sprinkle with extra parsley and serve warm.

Notes

Use unflavored dental floss for the cleanest slices without squashing the swirl. Rolls are best served warm, straight from the oven, while the cheese is still melty.
