Ingredients
  

  • 2 (15-ounce) cans whole kernel corn, drained
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 sleeve buttery crackers, crushed
  • 3 tablespoons melted butter

Instructions
 

  • Preheat oven to 375°F.
  • Grease a medium-sized round baking dish.
  • Combine corn, spinach, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
  • Stir in cheddar, mozzarella, and Parmesan cheeses.
  • Spread mixture into prepared baking dish.
  • Combine cracker crumbs with melted butter and sprinkle over top.
  • Bake for 30–35 minutes until bubbly and golden brown.
  • Let rest for 5 minutes before serving.

Notes

  • Drain spinach thoroughly.
  • Freshly shredded cheese gives the best texture.
  • Can be assembled one day ahead.
