Ingredients
  

  • 1 pound pork breakfast sausage or mild Italian sausage (450 g) casings removed
  • 1 pound processed melting cheese (such as Velveeta) (16 oz / 450 g) cut into 1-inch cubes
  • 1 can diced tomatoes with green chilies (10 oz / 283 g) undrained

Instructions
 

  • In a large skillet over medium heat, cook the sausage until browned and no pink remains, breaking it up as it cooks, about 7 to 10 minutes. Drain excess grease.
  • Lightly spray a 2- to 4-quart slow cooker with nonstick cooking spray.
  • Add the cubed cheese to the slow cooker.
  • Spoon the browned sausage over the cheese.
  • Pour the undrained diced tomatoes with green chilies over the top.
  • Cover and cook on LOW for 1 hour 30 minutes, 2 hours, or HIGH for about 1 hour, stirring every 30 minutes.
  • Once melted and bubbly, stir until smooth and combined.
  • Switch to WARM and serve directly from the slow cooker.

Notes

  • Breakfast sausage gives the most classic flavor; use hot sausage for extra kick.
  • Mild or hot diced tomatoes with green chilies both work well.
  • Add a splash of milk if the dip thickens too much.
  • Best served with tortilla chips, crackers, or toasted bread.
