1poundpork breakfast sausage or mild Italian sausage(450 g) casings removed
1poundprocessed melting cheese (such as Velveeta)(16 oz / 450 g) cut into 1-inch cubes
1candiced tomatoes with green chilies(10 oz / 283 g) undrained
Instructions
In a large skillet over medium heat, cook the sausage until browned and no pink remains, breaking it up as it cooks, about 7 to 10 minutes. Drain excess grease.
Lightly spray a 2- to 4-quart slow cooker with nonstick cooking spray.
Add the cubed cheese to the slow cooker.
Spoon the browned sausage over the cheese.
Pour the undrained diced tomatoes with green chilies over the top.
Cover and cook on LOW for 1 hour 30 minutes, 2 hours, or HIGH for about 1 hour, stirring every 30 minutes.
Once melted and bubbly, stir until smooth and combined.
Switch to WARM and serve directly from the slow cooker.
Notes
Breakfast sausage gives the most classic flavor; use hot sausage for extra kick.
Mild or hot diced tomatoes with green chilies both work well.
Add a splash of milk if the dip thickens too much.
Best served with tortilla chips, crackers, or toasted bread.
